It’s Thursday, and we’re thirsty. It’s also August, which means we have to do what we can to stay cool in these 95 degree temps. But fall is right around the corner and porch and patio season will be over before we know it (wahhh). So in the first post of our new series, What We’re Sippin’ On, we looked to one of the best rooftop bars in NYC, the Loopy Doopy Rooftop Bar, for some inspo on how to keep our cocktails cold so that we can bear to sit on our porches at night.
The Loopy Doopy Rooftop Bar sits atop the 16th floor of the Conrad hotel in New York City, and has incredible views of the Hudson River, the Statue of Liberty and lower Manhattan. It’s a great place to go for happy hour after work or for a little Saturday afternoon refreshment. And while they have an array of cocktails to choose from, its their signature “Prosecco and Ice Pop Cocktail” that we knew we had to try.
Such a simple, genius idea. (Why didn’t we think of it?!)
Just pour a glass of your favorite prosecco and add a fruity popsicle of your choice.
We used Ruffino Prosecco and an assortment of fruit popsicles we picked up from Whole Foods: Strawberry, Berry Rhubarb (this one contains veggies which makes it healthy, right?) and Lime.
In our opinion, the berry based popsicles tasted best mixed with the prosecco. (Save the lime for your tequila.) Also, it’s good to use larger or heavier wine glasses (even red wine glasses) so that the popsicle doesn’t make the glass turn over.
The drinks were delicious. The popsicle kept the prosecco nice and cold and added a hint of fruity flavor. We will definitely be making these all weekend. They make the perfect, super simple and fun cocktail to serve at a dinner party or on a weekend lounging by the pool.
