Just in time for the July 4th festivities, I’ve got a crowd-pleasing cocktail that is sure to impress, and goes perfect with any cookout, BBQ or summer dinner party. Just a few steps and tools are needed for this wowing watermelon concoction, and I’ll walk you through it. If you caught this week’s Hollyday Happy Hour, you already know it works!
WATERMELON MARGARITA FROM A WATERMELON KEG
YOU WILL NEED
1 ripe, large watermelon
1-2 bottles of tequila (I used Casamigos)
Sparkling mineral water or soda water (I used Topo Chico)
Start by slicing a very thin piece off the bottom of the watermelon to keep it stable when sitting upright.
(This step is optional if your watermelon sits upright fine on its own!)
Next, cut off the top of the watermelon. Be sure to cut enough off so that you are able to reach into the bottom of the watermelon to gut it. Set the top you just cut off to the side, because you will later use it as the lid.
Using a large spoon or ice cream scooper, scoop out all the inside of the watermelon and set aside in a bowl.
Be sure to only scrape out the red part, leaving the light green outer layer that’s closest to the skin.
Once you’ve scooped out all the watermelon, using a knife or apple corer, make a while slightly smaller than the shank of the tap on the front, bottom half of the watermelon. This is where you will insert your tap.
At this point, follow the specific directions that come with your tap, which will come with the other parts (like a washer, stabilizer and nut) and you will secure the tap on the inside of the watermelon.
Now comes the fun part! To mix up the cocktail:
Add desired amount of tequila into the watermelon
Add the watermelon juice from the bowl of watermelon you scooped out to the tequila
Add the juice 4-5 limes, to taste
I added Topo Chico, a sparkling mineral water, which made it very refreshing IMO
Another option would be blending the watermelon and the juice you scooped out in a blender, liquifying it and adding it to the tequila & lime
Place the watermelon top back on the watermelon
Salt the rim of your glass, if desired
Add ice & pieces of the watermelon you scooped out to each glass
Pour from the tap, and garnish with lime
